I’m strong to the finich, Cause I eats me spinach

Picked the first batch of spinach today and made a spinach quiche that would have made Popeye proud. The following recipe was easy and a pleasure to eat.

Spinach Quiche 

4 oz         chopped fresh spinach – rinsed well
1 cup       shredded Swiss cheese
1/2 cup    shredded Monterey Jack cheese
1/2 cup    cottage cheese
1 1/4 tsp  dried minced onion
1 tbs        olive oil
½ tsp       basil
½ tsp       savory
½ tsp       pepper
¼ tsp       garlic salt
4             eggs
1/2 cup    evaporated milk
1             pie crust

Blend cheeses, onion, oil and seasonings until smooth. Add eggs, milk, and spinach. Pour into prebaked (according to directions on box) pie crust shell. Bake at 375 degrees for 35 to 40 minutes. Cool for 10 to 15 minutes.
